Easy Box Cake Recipe

I’ve always loved to experiment with baking, even as a child I was constantly mixing up concoctions. Some of them were eatable, others not so much. When I graduated college and the work life consumed most of my time, the love of baking took to the back burner. Working a full time job and helping out on the farm left very little time to do anything else. So since I didn’t have much extra time on my hands I decided the most rational thing to do is to add more to my plate… Let me start out by saying I have always been terrible about putting too many irons in the fire and when life gets overwhelming I like to add more to it. Not the smartest, right? In 2024 I got a new border collie puppy (Roxie) and I thought it would be a good idea to start her training out on something a little less aggressive than cattle. So I started researching and found an article about using ducks. I thought they would be perfect and less expensive than trying sheep out. So I got online and ordered 6 little runner ducks.

So how does this story relate to an easy box cake recipe? Once these ducks got a little older they started to lay eggs and I had always heard that ducks eggs are amazing for baking. So I started baking different things. In the mean time I ended up ordering more ducks, so now I am at a total of 20 ducks! Now that I’ve got duck eggs packed everywhere in the refrigerator I needed something to do with them, so I started experimenting again with baking. During that experimenting process I found a really good method for making boxed cake mixes taste better. Below is the recipe I used for a chocolate cake mix.
1 Box Cake mix
-follow the directions on the box mix except for the eggs. You can also use milk instead of water.
4 duck eggs
1 - regular sized package of chocolate Instant pudding mix
Mix everything together with a stand mixer on medium speed for 2 minutes.
Pour in a greased 9x13 pan
Bake at 350 degrees for around 35 minutes. The time varies with your oven so just keep an eye on it the first time you make it.
Once cooled you can add your favorite icing.
So that’s how a simple purchase of 6 little ducks got me back into baking again. I hope to share more recipes, so keep an eye out.
